About the Course
You will make your own delicious
creamy Brie and soft gourmet cheese (Fromage Frais) under careful instruction. A day
for mixing learning and fun and yes you will be allowed to play with
your food!! Enjoy a gourmet lunch and a cheese tasting of some
fabulous local cheese. Your host, Neil Willman, is considered
the Cheese Guru by specialty cheesemakers in Australia and New
Zealand. He is the Master Judge of the New Zealand Specialty
Cheesemakers' Association's Cuisine Champion of Champions Cheese
Awards, the Principal of the New Zealand Cheese School, and has
co-authored Australasia's top selling home cheesemaking book, 'Home
Cheesemaking' considered by many to the the bible for home
cheesemakers. Neil has trained thousands of people over the
past 30 years including media celebrities.

More about Course Instructor Neil Willman
Neil is a leading authority on specialty cheese. Neil has assisted many
specialty cheesemakers in getting established over the past 15 years.
As well as being the Master Judge of the New Zealand
Cheese Awards, he is Head Judge of the Australian Grand Dairy Awards, the DIAA
National Dairy Products competition and a 3 time judge at the World Champion
Cheese contest. He has also judged at the British Cheese Awards and
several home Cheesemaker competitions. Neil has been
training cheese enthusiasts for over 30 years in Australia and New Zealand and loves to share his passion
for cheese.
