About the Course

This course is specifically designed for people wanting to fulfil their dream of becoming a Cheesemaker for a day. You will be the Cheesemaker making some absolutely divine creamy Brie or Camembert.  Don't dream about it, do it!  At last an opportunity to get curds in your whey! 

You will carry out the Cheesemaking steps under the supervision and instruction our cheese guru Neil Willman.  During the afternoon Neil will treat you to a selection of fine cheese for tasting.  During the tasting session you will learn what qualities are desirable in each type of cheese. 

A feature of this course will be an open forum, a chance to have all your questions answered. And yes, you will take home to nurture, care for and love, your own Brie, for richer or creamier, until both shall you part.

Course Leader   Neil Willman
Neil is a leading authority on specialist cheese.   Neil has assisted many specialty cheesemakers in getting established over the past 15 years.  He is the Master Judge of the New Zealand Cheese Awards, Head Judge of the Australian Grand Dairy Awards, the DIAA National Dairy Products competition and a 3 time judge at the World Champion Cheese contest.  He has also judged at the British Cheese Awards.  Neil has been training cheese enthusiasts for over 25 years in Australia and New Zealand and loves to share his passion for cheese with anyone who will listen.
